Winged Beans - Psophocarpus tetragonolobus
The winged bean is a tropical herbaceous legume plant that is disease-resistant as well as having all plant parts are edible. It grows well in a variety of soil, here in Florida the pH is slightly acidic and we had a great harvest this year.

The leaves can be eaten like spinach or lettuce, the flowers can be used in salads, tubers can be eaten raw or cooked, and seeds can be used in similar ways as the soybean, making this an all-around versatile plant to have in the garden.

Let's talk about flavor, make sure to harvest your beans early, and look for pods that are bright green and are no longer than about your longest finger. When harvested young the beans are tender and yummy, if you wait too long, they will become more fibrous and aren't as desirable.
