Thai Soldier Long Bean ~ Vigna unguiculata

The Thai Soldier Long Bean is a leguminous vegetable crop with climbing vines that produce long pods that are consumed and are cooked vegetable. The pods are notably beautiful with streaks of purple/red splashed on bright green.

This plant can be a vigorous grower that is best when supported by a trellis. The beans after all are about 12 inches long and having them on the ground isn't ideal.  

These beans are a staple crop in Thailand and have recently begun to trend with local growers across the state. The Thai Soldier bean is a vigorous grower and can be produced late into the fall. Quite different from traditional green beans, the long beans are best when lightly sautéed in oil like a stir fry rather than steaming, because they absorb the moisture and become mushy

In Florida, long beans can be grown and harvested twice a year and can be grown in a wide variety of soil, making it an ideal addition to the edible garden. This is an easy plant to grow, maintain, and harvest from especially if you are a beginning gardener.
